Pre-heat oven to 375 degree, Spray one 12 cup muffin tin with non stick spray.
2 1/2 cups cake flour
2 1/2 tsp baking powder
1/2 tsp salt
1/2 cup veg. shortening or unsalted butter, softened
3/4/cup milk or use whipping cream for a richer muffin
1 tsp vanilla extract
1 1/4 cup blueberries
In a bowl mix together flour, baking powder, and salt. Set Aside
In a mixer cream sugar and butter until fluffy, for 2 minutes. Beat inh eggs, milk and vanilla. Using a wooden stir in flour mixture just until moistened. Fold In BlueBerries.
Scoop into prepared muffin tin. Bake in pre-heated oven until light brown and a toothpick inserted into center comes out clean. 22 to 26 minutes. Let cool in tin on wire rack for ten minutes. Transfer to rack to cool completely.
